Light and fluffy yeast rolls that are quick and eazy

Ingredients
  • 2 cups very warm water
  • 2 pkgs rapid rise yeast
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 Tablespoon salt
  • 4 cups all purpose flour
  • 2 additional cups all purpose flour

Directions
  1. Place water in large bowl
  2. add yeast
  3. stir in sugar, oil, salt, and 4 cups flour.
  4. Beat well with electric mixer at med to high speed.
  5. Stir in 5th cup flour.
  6. Add last cup (#6) of flour (1/4 cup at a time). Dough should be elastic, but not dry.
  7. Turn out on floured board and knead for 5 to 10 min
  8. Transfer to greased bowl, cover and place in warm, draft-free area.
  9. Allow to rise to double.
  10. Punch down and turn out on floured board.
  11. Knead to remove most of the air bubbles.
  12. Pinch off approx 2 inch diameter pieces.
  13. Place in greased pan.
  14. When all rolls made, brush with oil or butter.
  15. Allow to rise to double.
  16. Bake in hot (425) oven until golden brown.
  17. Remove from pans and cool on wire rack or serve while still warm.
  18. May be frozen after baking.
