Grilled Lemon-Thyme Beef Steaks

- 4 well-trimmed boneless beef top loin (strip) or rib-eye steaks, cut 1-inch thick (about 2 1/2 to 3 pounds) shopping list
- 3 tablespoons chopped fresh thyme (tarragon would be nice, too!) shopping list
- 2 tablespoons minced garlic shopping list
- 1 tablespoon freshly grated lemon peel shopping list
- 1 tablespoon olive oil shopping list
- 2 teaspoons coarse grind black pepper shopping list
- 1 teaspoon salt shopping list
How to make it
- Combine seasoning ingredients; press evenly onto beef steaks, both sides.
- Place steaks on grid over medium, ash-covered coals.
- Place presentation side down first.
- Grill top loin steaks, uncovered, 15 to 18 minutes (rib-eye steaks 11 to 14 minutes) for medium rare to medium doneness
- Move steaks 1/4 turn after 10 or 12 minutes for that nice grill pattern!
- Turn over after 18 minutes and grill to desired doneness.
