Pecan Spice Muffins

I came up with these by accident when my food processor decided to say Kaput when I was making carrot cake muffins... they're really yummy and easy to make and perfect on the go!
Ingredients
- 1 1/2 c. oil shopping list
- 2 tsp. cinnamon shopping list
- 1/2 tsp nutmeg shopping list
- 1/4 tsp ginger shopping list
- 4 eggs shopping list
- 1 1/2 tsp orange extract shopping list
- 1 1/2 tsp. baking soda shopping list
- 2 c. sugar shopping list
- 2 c. flour shopping list
- 1 8 oz bag chopped pecans shopping list
How to make it
- Preheat oven to 350 degrees.
- Beat eggs until fluffy.
- Add oil and extract and beat well.
- Sift dry ingredients together and add to egg mixture.
- Add nuts and mix well.
- Spoon into lightly greased muffin pan and bake at 350 degrees for 30 minutes or until toothpick inserted in center comes out clean.
