Ingredients
  • 1 to 1 1/2 cups grated cucumber
  • 1 quart buttermilk
  • 2 tablespoons chopped green onion
  • 1 teaspoon salt
  • cucumber slices
  • chives

Directions
  1. Combine grated cucumber, buttermilk, onion, and salt; mix well.
  2. Cover and chill at least 2 or 3 hours.
  3. Mix again before serving in chilled cups.
  4. Garnish with cucumber slices and chives.
  5. Yield: 8 servings.

  7. Note: Scoop out and discard seeds before grating cucumber.

Just a quick question....do you peel your cukes, first? (trying to figure out something to serve this in to make a great presentation...I'll letcha know what I come up with!) Great addition, thank you.
