SALMON CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sims Estate in Arlington, Texas in 1991.

Ingredients
  • 7-3/4 ounce can salmon
  • 3 cups cooked egg noodles
  • 1 cup grated cheddar cheese
  • 1 cup frozen peas thawed
  • 1/4 cup sliced green onions
  • 2 tablespoons minced parsley
  • 1 can cream of celery soup
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Grated Parmesan cheese

Directions
  1. Drain and flake salmon reserving liquid.
  2. Combine salmon and liquid with remaining ingredients except Parmesan cheese.
  3. Place in buttered casserole and sprinkle with grated Parmesan cheese.
  4. Bake at 375 for 35 minutes then garnish with parsley and serve.
