Ingredients
  • Basic Waffle Mix (Yield: 8 waffles)
  • 3 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 4 tablespoons melted butter
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 cups buttermilk
  • Combine all ingredients. Mix until smooth.
  • Filling
  • 12 oz. cream cheese (softened)
  • 1/2 cup confectioners sugar
  • 1 teaspoon orange extract
  • (Combine above ingredients until smooth.)
  • 4 peaches, peeled and sliced (Reserve for assembling waffles)
  • Prepare basic waffle mix and add 2 teaspoons orange extract and 2 teaspoons orange rind. Pre-heat waffle iron. Spray with cooking spray. Make waffle.

Directions
  1. To assemble: spread approximately 3 tablespoons of filling on waffle. Spread a layer of peach slices over filling and fold waffle over. Top with warm Praline Sauce (recipe below). Garnish with a dollop of sour cream, peach slices and a sprig of fresh mint.
  2. Praline Sauce
  3. 1/2 cup butter (1 stick)
  4. 2 cups brown sugar
  5. 1 cup whole pecans
  6. (Heat above ingredients in saucepan until all sugar is dissolved.)
  7. Filling
  8. 1 medium onion chopped
  9. 2 tablespoons green pepper chopped
  10. 1 lb. bulk sausage (cooked and drained)
  11. 1 cup grated cheddar cheese
  12. 1/2 cup cottage cheese
  13. Sauté onions and peppers until soft. Add remaining ingredients. Mix well and set aside.
  14. Blender Hollandaise Sauce
  15. 2 eggs
  16. 6 tablespoons lemon juice
  17. 1/2 teaspoons salt
  18. 1 cup butter
  19. Combine first 3 ingredients in blender. Melt butter in small pan until bubbling. While blender is on, add hot butter and blend until thickened. Pour into small pan and keep over hot water until ready to use.
  20. Prepare waffles with basic waffle mixture. Spread approximately 1/2 cup of filling on waffles. Fold over and top with Hollandaise sauce. Garnish with fresh herbs.
