Ingredients

Olive oil

1 cup zucchini, chopped

1 cup eggplant, chopped

1/2 cup tomato, chopped

1/2 cup green pepper, chopped

1/2 cup onion, chopped'

1 clove garlic, finely chopped

1/2 tsp. thyme

1/2 tsp. basil

1 cup mozzarella cheese, grated

1 1/4 cup milk

1/4 cup sour cream

3/4 cup Bisquick

3 eggs

Directions

Preheat oven to 400

Heat oil in saute pan

Add next 7 ingredients and saute until slightly tender

Mix milk, sour cream, Bisquick, and eggs until blended

Put sauteed veggies into 9 in. pie plate

Sprinkle cheese over top of veggies

Pour Bisquick mixture into pie plate

Bake for 30 minutes
