Ingredients

How to make it

  • Preheat oven to 400
  • Heat oil in saute pan
  • Add next 7 ingredients and saute until slightly tender
  • Mix milk, sour cream, Bisquick, and eggs until blended
  • Put sauteed veggies into 9 in. pie plate
  • Sprinkle cheese over top of veggies
  • Pour Bisquick mixture into pie plate
  • Bake for 30 minutes

    So I made this last night & it was delicious!!!! I tweaked the recipe a bit to fit what I had on hand: I had & used a whole large eggplant & paired it with two smallish zucchini & cherry tomatoes. I used half & half instead of the milk, yogurt instead of the sour cream, doubled the cheese, a whole head of garlic & approximately 3/4 cup of marinara mixed in with the veggies. I used a buttermilk baking mix & my large casserole dish that's maybe 9X13? My sweetie who is not an eggplant fan, had not only seconds, but thirds and raved about how much he liked it!!!

    Love this....sounds like a perfect meatless meal. Gotta love the Bisquick...it saves me many a night. Dumplings, pancakes, impossible pie, but funny I never use it for biscuits. LOL
