Ingredients
  • 2 T. butter, softened
  • 1 C. sugar
  • 2 eggs, separated
  • 1 1/2 T. flour
  • juice and grated zest of 1 1/2 lemons
  • 2 C. evaporated milk
  • 1 t. lemon extract

Directions
  1. Preheat oven to 325°F.
  2. Cream butter and sugar.
  3. Stir in egg yolks, 1 at a time.
  4. Add flour, juice and zest.
  5. Add milk and lemon extract.
  6. Beat egg whites until stiff but not dry.
  7. Gently fold lemon mixture into egg whites.
  8. Pour into a buttered 10-inch pie plate.
  9. Bake 1 hour until brown and firm.
  10. Let cool slightly.
  11. Consistency is between a custard and soufflé.
  12. Cut in wedges and serve warm.
