Moist, creamy cream pie that is actually a cake. One of my husbands favorite dishes.

  • 3 large eggs
  • 1 t. vanilla extract
  • 1/2 cup sugar
  • salt
  • 3/4 cup cake flour
  • Filling
  • 1/2 cup sugar
  • 1/4 cup flour
  • 11/2 cup milk
  • 6 large egg yolks
  • 2 t. vanilla
  • pinch salt
  • Glaze
  • 1/2 cup sugar
  • 3 cups corn syrup
  • 2T. water
  • 4 squares simi-sweet chocolate, coarsely chopped.

Directions
  1. Preheat oven to 350.
  2. Grease a 9 inch cake pan
  3. Line with wax paper.
  4. Beat together egg yolks and vanilla at medium speed. until blended.
  5. Bean in half of the sugar until very thick and pale.
  6. Using clean, dry beaters, beat together eggs whites and sale at medium speed until very soft peaks form.
  7. Gradually beat in remaining sugar until stiff, but not dry, peaks form.
  8. Fold yolk mixture into egg whites. Sift flour over mixture; fold in gently.Do not over mix.
  9. Pour batter into prepared pan.
  10. Bake cake til top springs back when touched, 25 minutes.
  11. Loosen cake.
  12. Invert onto wire rack.
  13. Remove from pan, leaving paper on cake.
  14. Turn cake upright and cool.
  15. Prepare filling in sauce pan.
  16. Mix sugar and flour.
  17. Gradually wisk in milk, then egg yolks, vanilla and salt.
  18. Bring to boil over medium heat:boil one minute, whisking constantly.
  19. Strain through a fine sieve into bowl.
  20. Press plastic wrap on surface. Chill 30 minutes
  21. Using serrated knife, cut cake horizontally in half.
  22. Carefully remove wax paper.
  23. Place bottom layer on cake.
  24. Spread with filling.
  25. Place top on.
  26. Prepare glaze in a sauce pan, bring sugar, syrup, and wtehr to a boil over low heat.
  27. Stir constantly til sugar is dissolved.
  28. Remove from heat
  29. Add chocolate pieces and let stand one minute.
  30. Whisk til smooth.
  31. Slowly pour glaze over cake, allowing it to drip down the sides.
  32. Let stand til glaze sets.
  33. Keep in refrigerator.-

Oh holy crap! You've gone and posted my very favorite, must have when I'm down and out and havin' a bad day dessert!!!
