Fon-tuna Melts Recipe

Ingredients

Juice of 1 lemon

1/2 cup extra-virgin olive oil

Two 6-ounce cans of tuna, drained

4 ribs of celery from the heart, finely chopped

1/2 cup fresh basil leaves, chopped

1/3 cup chopped Sicilian green olives

2 tablespoons capers

Pepper to taste

4 thick slices crusty Italian bread

1 large clove of garlic peeled and halved

1/2 pound fontina cheese, shredded

Directions

Pre-heat oven to broil

In a bowl, whisk together lemon juice and anchovy paste

gradually whisk in the olive oil

mix in the tuna, celery, onion, basil, olives and capers

season with pepper

Lightly toast bread on both sides

Rub 1 side of each with the garlic

cover with the tuna salad and top with the cheese

Melt in the broiler

can also be made with Swiss or Provolone cheese
