Fon-Tuna Melts

- juice of 1 lemon shopping list
- 1/2 cup extra-virgin olive oil shopping list
- Two 6-ounce cans of tuna, drained shopping list
- 4 ribs of celery from the heart, finely chopped shopping list
- 1/2 cup fresh basil leaves, chopped shopping list
- 1/3 cup chopped Sicilian green olives shopping list
- 2 tablespoons capers shopping list
- pepper to taste shopping list
- 4 thick slices crusty Italian bread shopping list
- 1 large clove of garlic peeled and halved shopping list
- 1/2 pound Fontina cheese, shredded shopping list
How to make it
- Pre-heat oven to broil
- In a bowl, whisk together lemon juice and anchovy paste
- gradually whisk in the olive oil
- mix in the tuna, celery, onion, basil, olives and capers
- season with pepper
- Lightly toast bread on both sides
- Rub 1 side of each with the garlic
- cover with the tuna salad and top with the cheese
- Melt in the broiler
- can also be made with Swiss or Provolone cheese

Ooooh - I love this! It just sounds perfectly delicious and loaded with some of my favorite flavors. That beet, apple & gorgonzola salad sounds marvelous, too. Wow! Thanks so much! :) Vickie
