Banana Cake with Cream Cheese Frosting

- 1 1/4 cups granulated_sugar shopping list
- 1/2 cup soft butter shopping list
- 2 eggs shopping list
- 1 tsp baking_soda shopping list
- 1/4 tsp salt shopping list
- 4 Tbsps sour_cream shopping list
- 3/4 cup pecans or walnuts , chopped (optional) shopping list
- 1 cup very ripe banana , mashed shopping list
- 1 1/2 cups pastry or cake_flour shopping list
- 1 tsp vanilla_extract shopping list
- cream cheese frosting shopping list
- 1 box powdered_sugar (1 pound) shopping list
- 3 tbsp milk shopping list
- 1 3oz package cream_cheese , softened shopping list
- 1/4 cup soft butter shopping list
- 1 tsp vanilla_extract shopping list
- 1/2 cup chopped walnuts or pecans (optional) shopping list
- 1/4 cup chopped raisins (optional) shopping list
How to make it
- Pre heat oven to 350 degrees.
- Grease a 7-1/4 x 11-1/4 x 1-1/2 inch loaf pan or a 9X2X9 inch square pan and set aside.
- With an electric mixer, cream butter and sugar until light and fluffy. Break eggs into a bowl and lightly beat them.
- Add eggs to sugar and butter mixture, stirring lightly to mix.
- Combine baking soda and sour cream and add to the creamed mixture.
- Beat well, then add bananas, flour, salt and vanilla, stirring gently or mixing on low speed a few minutes.
- Bake for 35-45 minutes or until a toothpick inserted in the center of the loaf comes out clean.
- For a banana layer cake, double the recipe and bake in two ten inch round pans.
- Cream Cheese Frosting
- In a medium sized mixing bowl with an electric mixer, cream butter and cream cheese until light and fluffy.
- Add powdered sugar, milk and vanilla.
- Beat until smooth and creamy.
- Fold in nuts and raisins if used.
- Makes about 2 cups icing, enough for the top and sides of 2 8 or 9 inch layers, or about 24 cup cakes.
