Pea Salad From British Ancestry Recipe
This is an old Saxon recipe that is usually made for Christmas.

Ingredients
  • 1 14 oz. can small English peas, drained
  • 2 hard boiled eggs, chopped
  • 1 small jar pimentos, drained and chopped
  • 2 - 3 sweet pickles, chopped
  • 3 Tbsp. white onion or scallion, finely chopped
  • 1 celery rib, chopped
  • 2 slices old cheddar cheese or your favourite cheese, chopped
  • salt and pepper to taste
  • Mayonnaise mixed with a splash of pickle juice
  • Note: For a larger crowd this recipe is easily doubled or tripled.

Directions
  1. Drain peas and pimentos.
  2. Combine all ingredients in a mixing bowl.
  3. Add enough mayonnaise to hold ingredients together.
  4. Chill for 2 hours.
  5. If you don't like the addition of cheese it can easily be omitted.
