Ingredients
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • 2/3 cup sugar
  • 1 cup coffee, brewed strong
  • 1 cup milk
  • 2 egg yolks
  • 2 tablespoons unsalted butter
  • 1 baked 9" pastry shell - even graham cracker crust is fine too
  • Meringue Topping:
  • 2 egg whites
  • 4 tablespoons sugar
  • 1/2 teaspoon pure vanilla extract

Directions
  1. Buy your favorite pie crust or bake one.
  2. Brew coffee.
  3. In a medium saucepan, combine flour, salt, and sugar; add brewed coffee and milk.
  4. Continue to cook, stirring constantly, until mixture thickens.
  5. Separate eggs.
  6. Set aside the whites for the meringue.
  7. Beat the egg yolks until a golden yellow in a large heat-proof bowl.
  8. Stir the hot mixture slowly and carefully into bowl of beaten egg yolks and blend, then return to the saucepan.
  9. Cook just 2 minutes longer.
  10. Add the butter then allow the mixture to cool.
  11. Pour into pastry shell and make the meringue.
  12. In a clean metal or glass bowl, beat egg whites until frothy; gradually add sugar, continuing to beat until stiff peaks form.
  13. Add vanilla extract.
  14. Spoon meringue onto pie, spreading to crust edge to seal filling in.
  15. Bake at 325°F. for 15 to 18 minutes, until lightly browned.
