How to make it

  • Salad
  • Toss vegetables into a large bowl as you prepare them
  • Vinaigrette
  • In a small bowl, whisk together the vinegar, mustard, garlic, cumin, 1 tsp salt and a few grinds of fresh pepper
  • Slowly drizzle in the olive oil in a thin, steady stream, whisking as you go
  • This will form an emulsion and thicken the dressing
  • Stir in parsley and mint
  • To Assemble
  • Just before serving pour the vinaigrette over the salad and toss until everything is evenly coated
  • Taste to see if a little more salt is needed and serve.
