Roasted Parsnips with parsley

- 2lbs. medium parsnips,peeled,cut on diagonal into 1/2" thick slices shopping list
- 2Tbs extra virgin olive oil shopping list
- 1tsp coarse kosher salt shopping list
- 2Tbs(1/4 stick) butter shopping list
- 2tsp finely chopped fresh Italian parsley shopping list
How to make it
- Preheat oven to 450. Toss first 3 ingredients in bowl. Spread parsnips in single layer on rimmed baking sheet. Dot with butter
- Roast parsnips 20 mins. Using tongs,turn parsnips;roast until browned and soft,about 15 mins longer. Transfer to plate and season to taste with salt and pepper. Sprinkle with parsley.

Padrick and I have been wanting parsnips and this is different than my way of preparing them.....it's sounds awesome! Can't wait to make them, thanks for posting....big 5!
