Brie And Cherry Pastry Cups Recipe

Ingredients
  • 1 sheet frozen puff pastry, thawed
  • 1/3-1/2 cup red cherry preserves
  • 4 oz. Brie cheese, cut into 1/2x1/2 –inch pieces (36 pieces)
  • ¼ cup chopped pecans
  • 2 tbsp. Chopped fresh chives

Directions
  1. Heat oven to 375 degrees.
  2. Spray 36 miniature muffin cups with cooking spray (PAM).
  3. Cut pastry into 36 (1-1/2-in) squares.
  4. Slightly press each square into muffin cup; press center with finger or handle of a wooden spoon.
  5. Bake 10 minutes.
  6. Press center with handle of wooden spoon.
  7. Bake 6 to 8 minutes longer or until golden brown.
  8. Immediately press again in center.
  9. Fill each with about ½ tsp. Of preserves.
  10. Top each piece with a piece of brie, chopped pecans and chives.
  11. Bake 3-5 minutes or until cheese is melted.
  12. Serve warm. Makes 36 appetizers.

I know this recipe! From the one and only, Betty Crocker. I use Bonne Maman Cherry Preserves. These are always a popular request and big favorite when I cater :-)
