Zucchini Relish

- 10 cups zucchini; ground shopping list
- 4 cups onion; ground shopping list
- 5 tablespoons salt shopping list
- 2 1/4 cups vinegar shopping list
- 6 cups sugar shopping list
- 1 tablespoon nutmeg shopping list
- 1 tablespoon dry mustard shopping list
- 1 tablespoon turmeric shopping list
- 1 tablespoon cornstarch shopping list
- 2 tablespoons celery seed shopping list
- 1/2 teaspoon pepper shopping list
- 1 whole red bell pepper; chopped fine shopping list
- 1 whole green bell pepper; chopped fine shopping list
How to make it
- Combine zucchini, onion and salt, let stand overnight, then drain and rinse in cold water.
- Add remaining ingredients, mix well and bring to a boil.
- Simmer 30 minutes, then ladle into hot pint jars and seal.
- Makes about 7 pints.
- Process in hot water bath for 15 minutes.
- Remove from canner and let cool on towel, check for seal after cool.
