Zucchini Relish Recipe
This is a recipe that Mom got from a friend over 40 years ago. It was always our go-to recipe for relish. A food processor works well for chopping all the veggies (and is neater than the old food grinder we used to use).

Ingredients
  • 10 cups zucchini; ground
  • 4 cups onion; ground
  • 5 tablespoons salt
  • 2 1/4 cups vinegar
  • 6 cups sugar
  • 1 tablespoon nutmeg
  • 1 tablespoon dry mustard
  • 1 tablespoon turmeric
  • 1 tablespoon cornstarch
  • 2 tablespoons celery seed
  • 1/2 teaspoon pepper
  • 1 whole red bell pepper; chopped fine
  • 1 whole green bell pepper; chopped fine

Directions
  1. Combine zucchini, onion and salt, let stand overnight, then drain and rinse in cold water.
  2. Add remaining ingredients, mix well and bring to a boil.
  3. Simmer 30 minutes, then ladle into hot pint jars and seal.
  4. Makes about 7 pints.
  5. Process in hot water bath for 15 minutes.
  6. Remove from canner and let cool on towel, check for seal after cool.

Alterations


I made almost this exact recipe (same ingredients, slightly different amounts). Delicious! I'm going to try a recipe adding some chopped jalapenos next time, which considering the amount of zucchini my garden produces, will be very soon.
