White Wine Marined Grilled Chicken With Tomatoes And Basil Recipe Chefmeow / All my dishes

This is a very nice and tasty chicken recipe for all those that like chicken, tomatoes and herbs. Easy and tasty. Enjoy

Ingredients
  • 1 small white onion sliced
  • 3 cloves garlic crushed
  • 2-1/2 cups dry white wine
  • 4 boneless skinless chicken breasts
  • 3 cups chicken broth
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 cups peeled seeded and chopped fresh tomatoes
  • 1/4 cup butter
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup thinly sliced basil leaves

Directions
  1. Combine onion, garlic and wine then bring to simmer.
  2. Carefully ignite fumes of wine.
  3. When flame subsides pour into container large enough to contain breasts without overlapping.
  4. Chill then add breasts to cold marinade making sure they are completely covered.
  5. Cover and refrigerate 24 to 36 hours.
  6. Remove chicken breasts from marinade and set aside then strain liquid into small saucepan.
  7. Bring gently to simmer but do not allow mixture to boil.
  8. Skim surface of anything that floats to top.
  9. Continue simmering and skimming until wine is clear about 20 minutes.
  10. Add chicken broth to wine and skimming as it cooks reduce gently to 1/2 cup.
  11. This will take about 45 minutes.
  12. Remove chicken breasts from liquid and season with salt and pepper.
  13. Grill over medium high heat until cooked through but still moist about 6 minutes per side.
  14. Add tomatoes to reduced wine and broth then bring to simmer.
  15. Stir in butter by the tablespoon until incorporated then add oil and basil leaves.
  16. Divide sauce among 4 plates and top with grilled chicken breast.
