Fresh Peach Pie

This is from my Mother in law. She makes a great assortment of desserts.. You could use sugar free jello in this too.

In a medium size microwave safe bowl, combine sugar, cornstarch, and water. Microwave on high power until smooth. stir with wire whisk. Stir in Jello. Cool completely.
Arrange peaches in baked crust. Pour cooled filling over the peaches.
Chill until set. At least 2 hours.
Serve with a dollop of whipped cream.

This was good but I thought there could have been more peaches as I had a lot of Jello mixture. I think four cups of peaches would be better. I could not find peach Jello so I used strawberry. I did serve this with whipped cream and I think it is better with it. Put it in IMI on 8/6/15.
