Apple Stuffed Venison Rolls Recipe
A perfect mix of fall flavors and foods prepared relatively easy on the stovetop. I am not a venison fan myself, but my husband and kids love it. I am sure you will too :)

Ingredients
  • 4 venison steaks, preferrably tenderloin strip steaks
  • 1/2 t. salt
  • 1/4 t. ground pepper
  • 1 carrot
  • 1 med. onion
  • 2 cooking apples
  • 3 T. oil
  • 1 1/4 C. red wine
  • 6 T. apple sauce
  • Garnish:
  • apple slices
  • 2 T. butter

Directions
  1. Pound the venison steaks until they are very thin.
  2. Mix the salt and pepper and rub into both sides of the venison steaks.
  3. Grate the carrot.
  4. Peel and slice the onion thin.
  5. Peel and core the apples and cut into thin slices.
  6. Divide the grated carrot, onion and apple slices between the venison spreading across the steak.
  7. Form into rolls and secure with wooden toothpicks.
  8. Heat the oil in a large skillet and fry the rolls until browned on all sides.
  9. Add the wine and applesauce.
  10. Cover and simmer for 20 minutes.
  11. Don't over cook venison, your husband will just yell at you!
  12. Lift out the venison , remove the toothpicks and place the meat on a serving dish; keep warm.
  13. Boil the cooking liquid until reduced by a third.
  14. Pour over the venison rolls and serve garnished with the apple slices fried in the butter.
  15. Goes good with garlic smashed potatoes, rice or pasta.

Wonderful recipe!! I have not eaten venison in years, but I did really like it when I had it!
