Ingredients
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 cups sugar
  • 4 eggs
  • 2/3 cup water
  • 1 cup vegetable oil
  • 2 cups pumpkin

Directions
  1. Sift dry ingredients together in a large bowl.
  2. Make a well in center. Add eggs, water, oil and pumpkin. Mix with electric mixer.
  3. Put into two or more greased loaf pans.
  4. Bake at 350 degrees for 1 hour.
  5. Test with toothpick for doneness.
  6. Wonderful served hot with cinnamon butter.

This is just like my mothers recipe. I will have to try this using my Hopi squash then get back to you. I am suer it will be great. Bookmarked!
