Quick Chicken Cacciatore

- 4 boneless/skinless chicken breast pieces shopping list
- 2 med. zucchini,peeled and sliced shopping list
- 1 small onion,cut in large pieces shopping list
- 1c fresh mushrooms,cleaned and sliced shopping list
- 3Tbs olive oil,divided shopping list
- 1tsp salt shopping list
- 1/2tsp. black pepper shopping list
- 1/2tsp garlic powder shopping list
- 1tsp oregano shopping list
- 2tsp basil shopping list
- 1/4tsp fennel seed,crushed shopping list
- 1Tbs. water shopping list
- 1 14oz. can diced tomatoes shopping list
- 1 8oz. can tomato sauce shopping list
How to make it
- Preheat oven to 375. In small bowl,mix together salt,spices and water;set aside. Wash chicken,pat dry. Heat a large skillet over med-high heat. Add 1Tbs of olive oil. When hot,add chicken breasts. Cook 2-3mins per side till nicely browned. Remove to a plate. Adding the remaining 1-2Tbs of oil as needed,quickly brown the zucchini slices,onion,then mushrooms. Keep the pan good and hot;the object is to brown the chicken and veggies without cooking all the wat through.
- Mix together the spice mix,diced tomatoes and tomato sauce.
- Pour 1/2 mixture into 9x13 pan. Add the vegetables to the pan. Place chicken over vegetables. Pour remaining tomato mixture over top of chicken. Cover pan and bake till vegetables are tender and chicken cooked through,about 30-40 mins.
