Quick Chicken Cacciatore Recipe
Wonderful dish for cool,crisp fall days. Pop it in the oven,go out and play in the leaves and when you come in,dinner will be ready..This is from Penzey's Spice.

Ingredients
  • 4 boneless/skinless chicken breast pieces
  • 2 med. zucchini,peeled and sliced
  • 1 small onion,cut in large pieces
  • 1c fresh mushrooms,cleaned and sliced
  • 3Tbs olive oil,divided
  • 1tsp salt
  • 1/2tsp. black pepper
  • 1/2tsp garlic powder
  • 1tsp oregano
  • 2tsp basil
  • 1/4tsp fennel seed,crushed
  • 1Tbs. water
  • 1 14oz. can diced tomatoes
  • 1 8oz. can tomato sauce

Directions
  1. Preheat oven to 375. In small bowl,mix together salt,spices and water;set aside. Wash chicken,pat dry. Heat a large skillet over med-high heat. Add 1Tbs of olive oil. When hot,add chicken breasts. Cook 2-3mins per side till nicely browned. Remove to a plate. Adding the remaining 1-2Tbs of oil as needed,quickly brown the zucchini slices,onion,then mushrooms. Keep the pan good and hot;the object is to brown the chicken and veggies without cooking all the wat through.
  2. Mix together the spice mix,diced tomatoes and tomato sauce.
  3. Pour 1/2 mixture into 9x13 pan. Add the vegetables to the pan. Place chicken over vegetables. Pour remaining tomato mixture over top of chicken. Cover pan and bake till vegetables are tender and chicken cooked through,about 30-40 mins.
