What the title says. Hummus with beets. It adds a twist to the traditional hummus and makes for a much more colorful presentation.

Ingredients
  • 1/3 c olive oil
  • 1 chopped onion
  • 16 ounce can of beets, drained
  • 1 c hummus
  • 2 crushed garlic cloves
  • 1 Tbsp cumin
  • 1 Tbsp lemon juice

Directions
  1. Fry the onion in 1 Tbsp of oil until soft.
  2. Put all ingredients except the oil into a food processor and process until smooth.
  3. Transfer to a serving bowl and drizzle the remaining oil on the top.
