Chicken Cacciatore

- 8-10 skinless chicken thighs or legs or half & half shopping list
- flour generously seasoned with salt and pepper shopping list
- olive oil to coat pan shopping list
- 4 bell peppers 2 red, 2 green cut into strips shopping list
- 8 large mushrooms quartered into large chunks shopping list
- 1 large onion cut into chunks shopping list
- 5 large cloves of garlic smashed shopping list
- 3 stalks of celery chopped into 1-2 inch pieces shopping list
- 1 28oz can of whole Italian tomatoes (with basil) shopping list
- 1/2 cup of a red wine (merlot or cabernet) shopping list
- 1 bay leaf shopping list
- parmesan flavored rosotto rice shopping list
How to make it
- flour chicken and brown in olive oil
- set chicken aside
- add peppers, mushrooms, onion, garlic and celery to pan and cook till soft.
- pour in wine and reduce about 1/2 way
- add tomatoes and bring to boil
- return chicken and add bay leaf
- reduce heat to simmer for about 1 1/2 or 3 hours
- check broth after an hour and salt & pepper to taste
- prepare rosotto rice and serve chicken mixture on top of rice
