How to make it

  • flour chicken and brown in olive oil
  • set chicken aside
  • add peppers, mushrooms, onion, garlic and celery to pan and cook till soft.
  • pour in wine and reduce about 1/2 way
  • add tomatoes and bring to boil
  • return chicken and add bay leaf
  • reduce heat to simmer for about 1 1/2 or 3 hours
  • check broth after an hour and salt & pepper to taste
  • prepare rosotto rice and serve chicken mixture on top of rice
