Ingredients
  • 8-10 skinless chicken thighs or legs or half & half
  • Flour generously seasoned with salt and pepper
  • olive oil to coat pan
  • 4 bell peppers 2 red, 2 green cut into strips
  • 8 large mushrooms quartered into large chunks
  • 1 large onion cut into chunks
  • 5 large cloves of garlic smashed
  • 3 stalks of celery chopped into 1-2 inch pieces
  • 1 28oz can of whole italian tomatoes (with basil)
  • 1/2 cup of a red wine (merlot or cabernet)
  • 1 bay leaf
  • parmesan flavored rosotto rice

Directions
  1. flour chicken and brown in olive oil
  2. set chicken aside
  3. add peppers, mushrooms, onion, garlic and celery to pan and cook till soft.
  4. pour in wine and reduce about 1/2 way
  5. add tomatoes and bring to boil
  6. return chicken and add bay leaf
  7. reduce heat to simmer for about 1 1/2 or 3 hours
  8. check broth after an hour and salt & pepper to taste
  9. prepare rosotto rice and serve chicken mixture on top of rice
