Aunt Dorothys Applesauce Cake Recipe
This moist, spicy cake uses no eggs. My aunt always used this as the base for fruitcake at Christmas and it actually makes an edible fruitcake that is moist and not dry and crumbly.

Ingredients
  • 1 cup shortening
  • 2 cups sugar
  • 2 1/2 cups applesauce
  • 3 tablespoons cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 2 teaspoons baking soda
  • 2 2/3 cups flour
  • 1 cup walnuts; chopped
  • 1 cup raisins

Directions
  1. Cream together shortening and sugar until fluffy.
  2. Add applesauce.
  3. Sift together dry ingredients, add to creamed mixture.
  4. Stir until blended.
  5. Add nuts and raisins.
  6. Pour into greased and floured 9 x 13" pan.
  7. Bake at 350 degrees for 1 hour.
  8. NOTES : This cake uses no eggs. At Christmas, add 2 cups chopped candied fruit and bake in loaf pans and use as fruitcake.
