Gluten free does NOT have to mean boring! This is tilapia with a kick! Super easy and quick to make. Tastes great with clarified butter, for those sensitive to dairy.

Ingredients
  • 2 4oz tilapia fillets
  • 1tbsp clarified butter (or unsalted butter)
  • Rub:
  • 1tbsp paprika
  • 1tsp salt
  • 1tsp lemon pepper
  • 3/4 tsp garlic
  • 3/4 tsp red pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil

Directions
  1. Open all windows in the kitchen to ensure sufficient airflow.
  2. Blackening can produce a LOT of smoke.
  3. Mix all rub ingredients in a small bowl.
  4. Heat a skillet over high heat for a few minutes.
  5. Meanwhile...
  6. Melt clarified butter and brush over both sides of tilapia fillets.
  7. Coat both sides of the fillets with the rub mix.
  8. Place the the fillets in the skillet and fry for 3 minutes on high.
  9. Flip the fillets and fry for another 3 minutes.
  10. If the fish flakes easily with a fork, they are done.
  11. If not, flip them again and fry for about another 2 minutes.
  12. Makes 2 servings. Serve with rice or veggies.

Alterations


I added maybe 3/4 tsp. brown sugar (C&H Sugar brand is gluten free (800 234-5708)
I omitted garlic powder from the rub recipe, and instead rubbed a couple cloves of fresh minced garlic on the fish before applying the rub.
