Sicilian Eggplant Cheese Casserole

- 1 c. tiny shell macaroni shopping list
- 1 medium eggplant shopping list
- 1 small onion shopping list
- 3T olive oil shopping list
- 3 oz tomato sauce, and I added a few fresh tomatoes for flavor & color shopping list
- 1/4 c parsley shopping list
- 2 T lemon juice shopping list
- 1/2 c halved olives shopping list
- basil ( to taste ) shopping list
- marjoram ( to taste ) shopping list
- salt, pepper, shopping list
- garlic ( to taste ) shopping list
- 1/2 lb. monterey jack cheese shopping list
- 1 1/2 c parmesan cheese ( I used less ) shopping list
How to make it
- Preheat oven to 350'
- Cook macaroni and drain
- Cut eggplant into 1/2 in cubes then saute with onion in oil.
- Combine macaroni , tomato sauce, parsley, lemon juice, olives, basil, marjoram, seasonings. Mix with eggplant mixture.
- Put in baking dish and top with cheese, or not.
- Bake for 30 minutes.
