Sicilian Eggplant Cheese Casserole Recipe
A no meat dish that I found in a recipe book that is from Doris Day originally..... I'm eating it as I type . . . yum.

Ingredients
  • 1 c. tiny shell macaroni
  • 1 medium eggplant
  • 1 small onion
  • 3T olive oil
  • 3 oz tomato sauce, and I added a few fresh tomatoes for flavor & color
  • 1/4 c parsley
  • 2 T lemon juice
  • 1/2 c halved olives
  • Basil ( to taste )
  • Marjoram ( to taste )
  • salt, pepper,
  • garlic ( to taste )
  • 1/2 lb. monterey jack cheese
  • 1 1/2 c parmesan cheese ( I used less )

Directions
  1. Preheat oven to 350'
  2. Cook macaroni and drain
  3. Cut eggplant into 1/2 in cubes then saute with onion in oil.
  4. Combine macaroni , tomato sauce, parsley, lemon juice, olives, basil, marjoram, seasonings. Mix with eggplant mixture.
  5. Put in baking dish and top with cheese, or not.
  6. Bake for 30 minutes.
