Tomato Feta Boil Baked Shrimp Recipe
TOMATO FETA FOIL BAKED SHRIMP This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981.

Ingredients
  • 2 plum tomatoes halved seeded and thinly sliced
  • 1 clove garlic minced
  • 2 tablespoons minced green onion
  • 1 tablespoon minced fresh dill
  • 6 jumbo shrimp peeled but tail left on
  • 1 tablespoon olive oil
  • 2 ounces feta cheese

Directions
  1. Prepare medium hot charcoal fire or preheat a gas grill.
  2. On large sheet of heavy aluminum foil arrange tomato slices in center partly overlapping.
  3. Season with salt and pepper then sprinkle with garlic, half the green onion and half the dill.
  4. Top with shrimp and remaining green onion.
  5. Drizzle shrimp with olive oil and dot surface with lumps of feta.
  6. Bring two sides of foil up over shrimp and fold to seal then fold ends to form a package.
  7. Place package on grill over direct heat then cover and cook 8 minutes.
  8. Transfer to dinner plate and unfold then garnish with remaining minced dill.

I love shrimp and could eat it every day. To bad it is too expensive here for that. However I bet I could use this recipe with walleye and it would be great. I'm going fishing tomorrow. Wish me luck. L.


Could one do this in the oven and expect the same success?? It sounds ridiculously easy and tasty! I can't wait to try it!
