Traditional Garden Pickles

- 1 C plus 2 Tbl red or white wine vinegar shopping list
- 1 C plus 2 Tbl water shopping list
- 4 tsp sugar shopping list
- 1 1/2 tsp kosher salt shopping list
- 1/2 c thinly slice red onion shopping list
- 1 C cut green beans shopping list
- 1 C cauliflower florets shopping list
- 1/4 C fresh basil leaves shopping list
- 3 garlic cloves, peeled shopping list
- 1 tsp mixed color peppercorns shopping list
- 1 dried chile de arbol pepper (optional) shopping list
- 1 C thin red bell pepper strips (about 1/2 pepper) shopping list
How to make it
- In a medium saucepan, heat vinegar, water, salt, and sugar over high heat.
- Bring to a boil, stirring to dissolve sugar and salt
- In a 1 quart container, layer vegetables and seasonings in this order:
- red onions
- green beans
- cauliflower
- basil
- garlic
- peppercorns
- chile pepper, is using
- and red bell pepper
- Pour hot brine over vegetables
- Let pickles cool to room temperature, about 2 hours
- Cover and refrigerate for 24 hours to develop flavors
- Keep refrigerated 1 month
