Ingredients
  • 1 large bell pepper
  • 12 jalapinos
  • 1 1/2 cups apple cider vinegar
  • 1 pinch salt
  • 4 1/4 cups granulated sugar
  • 4 oz liquid pectin
  • 4 jalapinos seeded an finely chopped

Directions
  1. combine bell pepper and 12 jalapinos in a food processor
  2. finely chopped
  3. chopped peppers in a large sauce pan, add cider vinegar
  4. bring to boil- turn down let simmer 15-20 minutes-
  5. strain thru 2 layers of cheese cloth. discard pulp
  6. yields about 1 cup
  7. return to sauce pan-stir in salt,sugar until disolved.
  8. bring to boil, on med-high a rolling boil for 1 minute
  9. then stir in liquid pectin
  10. stir in remaining peppers,ladle into sterile jars, leaving 1/4 inch headspace. seal jars in a hot water bath
  11. refrigerate after opening
