Prosciutto Pizza Parcels Recipe

  • 8oz package frozen filo pastry
  • 8 large thin slices Prosciutto
  • 9 oz fresh spinach
  • 2 oz butter
  • 1 medium onion, minced
  • 4 oz fresh mozzarella ball
  • 1 egg, beaten
  • 2 Tbsp chopped Italian parsley
  • Freshly ground pepper to taste

Directions
  1. Defrost the filo pastry according to the manufacturer's directions.
  2. Wash the spinach, trim the stalks and put into a large lidded pan. Cover and cook until just wilted (you won't need to add water; the moisture on the leaves from washing should be plenty.) Drain in a sieve and press out as much excess liquid as possible. Roughly chop and and put into a large bowl. (*Alternatively, you could use frozen chopped spinach [thawed and drained], but honestly the fresh is MUCH better.*)
  3. In a frying pan, melt half the butter. Add the onion and cook gently until golden. Add to the spinach, mixing to combine, and allow to cool to room temperature.
  4. Add the prosciutto slices, cheese, egg and parsley to the spinach mixture and mix together.
  5. Preheat oven to 375F.
  6. Melt remaining butter in a small pan.
  7. For each parcel, take a sheet of filo, lay out on work surface and brush all over lightly with melted butter. Place about 1/8 of filling at one end, then fold edges over down the length of the sheet, then roll up, brushing the pastry with the melted butter occasionally as you go. Place finished roll on a baking sheet.
  8. Repeat with the rest of the pastry and filling. You should end up with eight rolls.
  9. Bake the parcels for 15 to 20 minutes until crisp and golden. Slice and serve warm.
