How to make it

  • Melt butter in large saucepan over medium heat then add bacon and cook for two minutes.
  • Add onion and garlic then cook stirring occasionally until softened about 6 minutes.
  • Stir in celery, bay leaf and thyme then cook five minutes.
  • Add potatoes and chicken stock then bring to the boil then reduce heat and simmer 15 minutes.
  • Add corn and continue to cook until potatoes are tender about 20 minutes.
  • Just prior to serving whisk in Worcestershire sauce, salt, pepper and sour cream.
  • Serve immediately and garnish with thyme sprigs.
