White chocolate Lime cheesecake

Ingredients
  • 1 package mothers vanilla chocolate chip cookies
  • 1/4 C melted butter
  • 1 1/2 Score or Heath candy bars (chopped)
  • 3 (8oz) packages cream cheese (regular, philly no lowfat here)
  • 3 C granulated sugar
  • 3 Eggs
  • 1 large bar Good white chocolate (4 oz) (melted)
  • 1 large bar Ghiradelli white chocolate-lime (4 oz)(melted)
  • 1/4 C Heavy whipping cream
  • Juice of 1 lime
  • Zest of 1 lime
  • 2 t Vanilla
  • 1 C Sour Cream
  • 1/2 C granulated sugar
  • 1 t vanilla

Directions
  1. Preheat oven 400 F
  2. Cut Parchment round to fit your spring form pan (9-10 inch)
  3. Grind Cookies add melted butter
  4. Press into bottom of pan
  5. Sprinkle chopped candy bars on top of crust.
  6. Bake for 10 minutes
  7. lower over to 350 F
  8. Mix cream cheese and sugar until well blended
  9. add eggs beating between each addition
  10. Add melted chocolate, whipping cream, lime juice, zest, & vanilla mix well
  11. Pour into spring form pan Bake for 60 minutes or until cake has risen and is set around the edge and only jiggles a little in the middle
  12. Remove cake from oven
  13. mix sour cream, sugar and vanilla together, top cake return to oven for 10 more minutes
  14. Turn off oven
  15. remove cake from oven and run knife around edge of cake
  16. return to oven cool until room temp
  17. Refrigerate over night
