I like the combination of a good white fish and the flavors of a good sausage. This is a creation that blends those flavors into a memorable weeknight dish that is both easy and delicious.

Ingredients
  • 1 lb Alaskan cod or similar whitefish
  • 3 links sweet Italian sausage, casings removed
  • 1/2 cup diced tomatoes
  • 3/4 cup mixed yellow, green, red sweet peppers, sliced
  • 3 cloves garlic, fine chopped
  • 1/4 cup sweet onion, fine chopped
  • 2 tb fresh cut Italian parsley, fine chopped
  • 2 tb fresh thyme leaves
  • 1/4 cup white wine
  • 3 springs fresh rosemary
  • lemon juice
  • kosher salt
  • salt and pepper to taste
  • cooked white rice

Directions
  1. In a skillet, brown the loose Italian sausage. When near done, push to one side of the skillet and saute the onions and garlic. Remove the onions and garlic.
  2. Place the cod on a paper plate and sprinkle with kosher salt. Add a squirt of real lemon juice to each cod fish section. Let sit.
  3. Pour the white wine over the sausage. layer the cod over the sausage. Cover with sweet pepper, tomatoes, and sauted onions and garlic. Sprinkle with thyme and parsley, and salt and pepper to taste. Lay in the sprigs of rosemary.
  4. Cover and steam fish in wine for 15 minutes, or until the fish turns white and flakes easily.
  5. Serve over a bed of freshly prepared white rice.

Thought I'd give photography a shot. It does greatly improve one's presentation :-) I just don't take the time usually to snap a photo. Your prodding was great incentive.

Threw this together one evening using the ingredients I found in my freezer. A piece of fish, a little left over sausage... a few spices from the back porch, and voila! Dinner!
