Tuesday Night Cod And Italian Sausage

- 1 lb Alaskan cod or similar whitefish shopping list
- 3 links sweet Italian sausage, casings removed shopping list
- 1/2 cup diced tomatoes shopping list
- 3/4 cup mixed yellow, green, red sweet peppers, sliced shopping list
- 3 cloves garlic, fine chopped shopping list
- 1/4 cup sweet onion, fine chopped shopping list
- 2 tb fresh cut Italian parsley, fine chopped shopping list
- 2 tb fresh thyme leaves shopping list
- 1/4 cup white wine shopping list
- 3 springs fresh rosemary shopping list
- lemon juice shopping list
- kosher salt shopping list
- salt and pepper to taste shopping list
- cooked white rice shopping list
How to make it
- In a skillet, brown the loose Italian sausage. When near done, push to one side of the skillet and saute the onions and garlic. Remove the onions and garlic.
- Place the cod on a paper plate and sprinkle with kosher salt. Add a squirt of real lemon juice to each cod fish section. Let sit.
- Pour the white wine over the sausage. layer the cod over the sausage. Cover with sweet pepper, tomatoes, and sauted onions and garlic. Sprinkle with thyme and parsley, and salt and pepper to taste. Lay in the sprigs of rosemary.
- Cover and steam fish in wine for 15 minutes, or until the fish turns white and flakes easily.
- Serve over a bed of freshly prepared white rice.
