How to make it

  • In a skillet, brown the loose Italian sausage. When near done, push to one side of the skillet and saute the onions and garlic. Remove the onions and garlic.
  • Place the cod on a paper plate and sprinkle with kosher salt. Add a squirt of real lemon juice to each cod fish section. Let sit.
  • Pour the white wine over the sausage. layer the cod over the sausage. Cover with sweet pepper, tomatoes, and sauted onions and garlic. Sprinkle with thyme and parsley, and salt and pepper to taste. Lay in the sprigs of rosemary.
  • Cover and steam fish in wine for 15 minutes, or until the fish turns white and flakes easily.
  • Serve over a bed of freshly prepared white rice.

    Thought I'd give photography a shot. It does greatly improve one's presentation :-) I just don't take the time usually to snap a photo. Your prodding was great incentive.

    Threw this together one evening using the ingredients I found in my freezer. A piece of fish, a little left over sausage... a few spices from the back porch, and voila! Dinner!

    You've included a photo!! :) :) I'm so proud ;)...now, i'll have to pick another dish for next, since you don't need my photo...hehehe...seriously, sounds tasty, and I'm sorry I missed it when it was posted, I wasn't about for a few days. Great addition, thanks for it!
