How to make it

  • Score skin of balogna as you would do for ham ( diamond shapes ).
  • Slather thickly all over with yellow mustard
  • Coat with lots of brown sugar, pressing so sugar adheres.
  • Bake 325 for 3 hours in a foil lined pan
  • Emeril says to serve with bread and more mustard.

    girl....we GOT to get you a smoker.
    that bolognia IS good in a oven
    but in a smoker, it is FANTASTIC.
    i give you 5 points, go buy a brinkmam dome smoker. there about 45 -50 bucks.
    and they look like R2D2. a chicken cooked in one
    will make you throw away your oven
