Uncle Jacks Fish Imperial

- 1 to 1.5 pounds cod fillets or orange roughy, halibut, walleye shopping list
- 3/4 cup mayonnaise shopping list
- 1/4 cup chopped red bell pepper shopping list
- 1 tablespoon chopped jalapeño pepper shopping list
- 2 teaspoons whole capers shopping list
- 1/2 teaspoon worcestershire sauce shopping list
- 1/2 teaspoon dry mustard shopping list
- 1 egg yolk only shopping list
- 1/4 cup freshly grated parmesan cheese shopping list
- 1/4 cup seasoned dry bread crumb salt and black pepper, to taste shopping list
- a pinch or two sugar shopping list
- Old Bay Seasoning shopping list
How to make it
- Sprinkle one side each fillet lightly with sugar and Old Bay Seasoning
- On the same side spread evenly a small amount of prepared yellow mustard.
- Refrigerate fillets for 15 to 20 minutes.
- Bring 1 1/2 cups water to boil in 10" skillet or fish poacher with tight fitting lid.
- Place fillets seasoned side up on greased rack so the fish does not touch water.
- Cover pan tightly, steam until fish flakes easily when tested with fork, about 3 or 4 minutes.
- Preheat oven to 375° Fahrenheit.
- Flake fish in a large bowl; combine the bell pepper, jalapeño, egg yolk, capers, Worcestershire sauce, dry mustard, and one-half cup of the mayonnaise.
- Stir until well mixed and season with salt and pepper to taste. Pour over crabmeat and toss LIGHTLY.
- Spoon the fish mixture into baking dish; then cover with the remaining mayonnaise.
- Sprinkle Parmesan and breadcrumbs on top and bake in the hot oven for 15 to 20 minutes until heated through.
- Serve immediately

Mr. Johnson, you have done it again!!!! Cod is easy around here, crab - not so much so what a great idea. Can't wait to try these! (I'm tellin' ya, its the Old Bay, baby.)
