Canoli Pie Recipe
This pie is really (and I mean REALLY) easy to make, and it's so refreshing on a hot summer's day. I hope you enjoy it as much as my family does!

Ingredients
  • 1 cup confectioners' sugar
  • 1 (15 ounce) container ricotta cheese
  • 1/4 cup blanched slivered almonds
  • 1/4 cup chopped maraschino cherries
  • 1/4 cup miniature semisweet chocolate chips
  • 1 (9 inch) graham cracker crust

Directions
  1. In a medium bowl, use a spoon to stir together the confectioners' sugar and ricotta cheese until well blended.
  2. Fold in the almonds, cherries, and chocolate chips.
  3. Spoon mixture into the graham cracker crust.
  4. Freeze for at least 3 hours to set.
  5. Remove from the freezer for 10 to 15 minutes before slicing and serving.
  6. Refreeze any leftovers.

Small world. I was thinking about the canoli cake an Italian bakery near where we lived years ago and recreating it. Hey, your approach is more convenient although I have to tell you, the white layers with the canoli filling and mini-chocolate chips is way above ignoring. However, convenient will likely win out at this point. ;-)


Love this!! What can I substitute for the almonds???(nut allergy)
