Pudim De Pao - Bread Pudding Recipe
In Portugal, we are raised not to waste anything - starting with bread. One way of using stale bread is by making one of the many many versions of this pudim.

Ingredients
  • 150 grs stale bread, in small pieces
  • 0.5 litre milk, hot
  • 6 eggs
  • 300 grs sugar
  • 1 tbsp Port wine (if unavailable, any sweet wine)
  • Grated zest of 1 lemon
  • 50 grs raisins
  • 40 grs butter
  • Half tsp cinnamon
  • Caramel to coat the dish

Directions
  1. Soak the bread in the hot milk, and blend to a fine purée.
  2. Whisk the eggs with the sugar and lemon zest and add to the bread mixture.
  3. Add the raisins, Port, melted butter and cinnamon.
  4. Coat the inside of a 24 cm diametre dish with caramel.
  5. Pour in the batter.
  6. Bake in bain-marie for 90 minutes at 160ºC.
  7. When cold, turn onto a serving dish and serve.

I do not think I've ever had a bread pudding with wine. Sounds delicious.


Well, you can't consider that "wine"- it is such an insignificant quantity, but enough to give it a bit of something. Enjoy it!

My mom makes it with 3 layers: bottom is with french bread, middle is a lemon cream and the top is meringue. I really need to get that recipe from her, I have not had it in years and your recipe reminded me of it :-)
