Arroz de tomate e feijao - Rice with tomato and beans

- 1 onion, finely chopped shopping list
- 3 tbsp olive oil shopping list
- 1 clove garlic, minced shopping list
- 2 ripe tomatoes, chopped shopping list
- 1 small can red beans shopping list
- 1/2 tsp ground cummin shopping list
- salt and pepper shopping list
- 1 cup rice shopping list
- 3 cups water shopping list
How to make it
- Fry the onion and garlic in the oil (we call this "estrugido").
- Add the tomatoes and fry for a couple of minutes more.
- Add the water and let it boil.
- Add the rice.
- Season and let it cook for 10 minutes.
- Add the beans and let it cook for a further 10 minutes.
- Check the seasoning, and use more cumin if you want.
- Serve straight away with whatever.
