Ingredients

How to make it

  • Fry the onion and garlic in the oil (we call this "estrugido").
  • Add the tomatoes and fry for a couple of minutes more.
  • Add the water and let it boil.
  • Add the rice.
  • Season and let it cook for 10 minutes.
  • Add the beans and let it cook for a further 10 minutes.
  • Check the seasoning, and use more cumin if you want.
  • Serve straight away with whatever.

    I made this today, in a slight variation, as it was not for a side dish, but as a stand-alone. I added a handful of thinly sliced bacon, and some tomato paste to supplement my two rather watery tomatos. It was absolutely delicious, amazingly so, consodering how simple it is. It didn't serve four ... one serving for my girlfriend and three for me!
    Tip: Go easy on the cumin, add small amounts, taste often. It can easily overwhelm the dish.
