Who says hummus always has to be made with chickpeas? This is a pretty, bright green dip/spread and has a very nice, fresh flavour. This is healthy too! A nice alternative to "regular" hummus.

Ingredients
  • 1 1/2 cups cooked fresh or frozen lima beans, drained (canned is ok)
  • big pinch of ground cumin
  • 4 or 5 big garlic cloves (i love garlic... so i sometimes add more.. adjust to your taste)
  • 1 tbsp tahini, or more, if desired
  • 1 tsp quality olive oil
  • 1 tbsp fresh lemon juice
  • small handful of fresh cilantro
  • small handful of fresh parsley

Directions
  1. Whiz everything together in a food processor, adding a little water, if needed, to get to desired consistency. Season with salt and pepper to taste.
  2. Serve with toasted pita chips and veggie crudites. Also nice as a spread for sandwiches. :)

This sounds good. I think you can pretty much use any kind of been for hummus. I actually have a can of broad beans I'm going to try with your recipe and I will definately pick up some lima beans. This is different than my hummus recipe. This is what it's all about.
