Garlicky Lima Bean Hummus

- 1 1/2 cups cooked fresh or frozen lima beans, drained (canned is ok) shopping list
- big pinch of ground cumin shopping list
- 4 or 5 big garlic cloves (i love garlic... so i sometimes add more.. adjust to your taste) shopping list
- 1 tbsp tahini, or more, if desired shopping list
- 1 tsp quality olive oil shopping list
- 1 tbsp fresh lemon juice shopping list
- small handful of fresh cilantro shopping list
- small handful of fresh parsley shopping list
How to make it
- Whiz everything together in a food processor, adding a little water, if needed, to get to desired consistency. Season with salt and pepper to taste.
- Serve with toasted pita chips and veggie crudites. Also nice as a spread for sandwiches. :)
