Baked Zucchini Fries

- 2 cups unseasoned bread crumbs shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1 t kosher salt shopping list
- 1/2 t ground black pepper shopping list
- 2 cups flour shopping list
- 4 large eggs, beaten shopping list
- 6 medium zucchini, unpeeled, but lengthwise into 2" long and 1/4" thick strips shopping list
How to make it
- Combine bread crumbs, Parmesan cheese, salt and pepper in a bowl or zipper top plastic bag. Place flour in a separate bowl and beaten eggs in another bowl. Dip zucchini sticks first in the flour until lightly coated, then in the beaten eggs. Toss them in the bread crumb mixture until covered. Transfer zucchini to a nonstick baking sheet and bake until coating is crisp, about 20 minutes. Cool Slightly before eating. Serve w/ ketchup or tomato coulis.
