How to make it

  • Brush 2 tablespoons oil on fish and grilling basket.
  • Cook fish over hot coals for 10 minutes per inch of thickness or until fish is flaky .

  • For Salsa, heat remaining oil in large skillet over medium heat.
  • Add onion, garlic, tomato and bell pepper and sauté for 10 minutes.

  • Top smelt with salsa mixture.
