Ingredients
  • 3 tablespoons oil, divided
  • 2 pounds smelt, pan-dressed
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 medium tomato, chopped
  • 1/2 green, red, or yellow pepper, chopped
  • 1 can (15oz) black beans, drain and rinse
  • Salt & pepper to taste

Directions
  1. Brush 2 tablespoons oil on fish and grilling basket.
  2. Cook fish over hot coals for 10 minutes per inch of thickness or until fish is flaky .

  4. as an alternative: add fish to a skillet with hot oil and fry.

  6. For Salsa, heat remaining oil in large skillet over medium heat.
  7. Add onion, garlic, tomato and bell pepper and sauté for 10 minutes.
  8. Add remaining ingredients; cover, reduce heat and simmer for 5 minutes.
  9. Top smelt with salsa mixture.
