Sassy Salsa and Fresh Smelts

- 3 tablespoons oil, divided shopping list
- 2 pounds smelt, pan-dressed shopping list
- 1 small onion, chopped shopping list
- 1 clove garlic, minced shopping list
- 1 medium tomato, chopped shopping list
- 1/2 green, red, or yellow pepper, chopped shopping list
- 1 can (15oz) black beans, drain and rinse shopping list
- salt & pepper to taste shopping list
How to make it
- Brush 2 tablespoons oil on fish and grilling basket.
- Cook fish over hot coals for 10 minutes per inch of thickness or until fish is flaky .

- as an alternative: add fish to a skillet with hot oil and fry.

- For Salsa, heat remaining oil in large skillet over medium heat.
- Add onion, garlic, tomato and bell pepper and sauté for 10 minutes.
- Add remaining ingredients; cover, reduce heat and simmer for 5 minutes.
- Top smelt with salsa mixture.
