Surimi is Alaskan Imitation Crab. You can make seafood salads or many different sandwiches. This particular one is my favorite...a change from a tuna melt.

Ingredients
  • 12 oz. Alaska Surimi Seafood (Imitation Crab)
  • 1/2 cup chopped celery
  • 1 Tablespoon chopped chives or green onions
  • 1/3 cup low-fat mayonnaise
  • 2 teaspoons Dijon-style mustard
  • 1 teaspoon lemon pepper seasoning
  • 3 English muffins, split
  • 6 slices (about 1 oz. each) or 1-1/2 cups shredded Cheddar, pepper-jack, or Swiss cheese

Directions
  1. Blend together Alaska Surimi Seafood, celery, chives, mayonnaise, mustard, and lemon pepper seasoning; set aside.
  2. Toast or broil muffin halves.
  3. Portion about 1/3 cup seafood on cut side of each muffin.
  4. Top each sandwich with cheese slice or 1/4 cup shredded cheese. Broil or microwave until cheese melts.
  5. That's it! Enjoy!

this looks like another winner! i love surimi sometimes. it's like the "hotdog" of fish...lol. But sometimes a girl just wants a bit of "junk" food, hey? :)

I like this recipe on crackers.


Great recipe for a noon time meal while enjoying the view of natures splendor.

I think I would love to have this with a small garden salad on the side.
