How to make it

  • Preheat oven to 350 degrees
  • Fill a 12 cup cupcake pan with liners
  • Whisk together flour, baking powder, baking soda, and salt. Set Aside
  • Add vanilla and strawberry puree to milk and set aside.
  • In mixer, cream butter and sugar on medium-high until light and fluffy
  • SLowly add egg and eff whites and mix on medium speed until blended
  • On low speed, add half the flour mixture and mix until just blended.
  • Add the milk mixture and mix until just blended
  • Add remaining flour mixture and mix just until blended smooth
  • Divide batter between 12 cupcake cups and bake 22 minutes.
  • *I used a frosting made with 2 oz cream cheese, 1/4 cup pureed strawberries and 2 cups powdered sugar but it came out a very runny consistency in spite of adding additional powdered sugar. Feel free to make some strawberry icing or any other flavored icing of your own! They are also delicious without.
