Ingredients

1 1/2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

4 oz unsalted butter, room temperature

1 cup granulated sugar

1 large egg, room temperature

2 large egg whites, room temperature

1/4 cup milk, room temperature

1/4 cup pureed strawberries

1 tsp vanilla extract

Directions

Preheat oven to 350 degrees

Fill a 12 cup cupcake pan with liners

Whisk together flour, baking powder, baking soda, and salt. Set Aside

Add vanilla and strawberry puree to milk and set aside.

In mixer, cream butter and sugar on medium-high until light and fluffy

SLowly add egg and eff whites and mix on medium speed until blended

On low speed, add half the flour mixture and mix until just blended.

Add the milk mixture and mix until just blended

Add remaining flour mixture and mix just until blended smooth

Divide batter between 12 cupcake cups and bake 22 minutes.

*I used a frosting made with 2 oz cream cheese, 1/4 cup pureed strawberries and 2 cups powdered sugar but it came out a very runny consistency in spite of adding additional powdered sugar. Feel free to make some strawberry icing or any other flavored icing of your own! They are also delicious without.
