Sprinkles Strawberry Cupcakes

- 1 1/2 cups flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 4 oz unsalted butter, room temperature shopping list
- 1 cup granulated sugar shopping list
- 1 large egg, room temperature shopping list
- 2 large egg whites, room temperature shopping list
- 1/4 cup milk, room temperature shopping list
- 1/4 cup pureed strawberries shopping list
- 1 tsp vanilla extract shopping list
How to make it
- Preheat oven to 350 degrees
- Fill a 12 cup cupcake pan with liners
- Whisk together flour, baking powder, baking soda, and salt. Set Aside
- Add vanilla and strawberry puree to milk and set aside.
- In mixer, cream butter and sugar on medium-high until light and fluffy
- SLowly add egg and eff whites and mix on medium speed until blended
- On low speed, add half the flour mixture and mix until just blended.
- Add the milk mixture and mix until just blended
- Add remaining flour mixture and mix just until blended smooth
- Divide batter between 12 cupcake cups and bake 22 minutes.
- *I used a frosting made with 2 oz cream cheese, 1/4 cup pureed strawberries and 2 cups powdered sugar but it came out a very runny consistency in spite of adding additional powdered sugar. Feel free to make some strawberry icing or any other flavored icing of your own! They are also delicious without.
