Crispy Mini Cream Cheese Sandwich Bites Recipe

Ingredients

1 cup herb and garlic cream cheese, spreadable type (i actually use the "light" versions for this as it generally spreads more easily)

48 mini rice cakes, any flavour (cheese is nice w/ the herb and garlic cream cheese)

1/3 cup fresh chives, finely minced (optional)

Directions

Spread cream cheese on 1/2 of the mini rice cakes. Top with a second rice cake.

Roll the sides (where the cream cheese is exposed, around the edges) in the minced chives. This step is optional, but makes the little sandwiches look kind of pretty. :-) You can also experiment with other flavours. (rolled in french fried onions, parsley, etc.)
