Marinated Scallops En Brochette Recipe

Ingredients
  • 1/2 cup butter, melted
  • 1/4 cup dry white wine
  • 1/4 cup orange juice concentrate
  • 1 tablespoon honey
  • 1 tablespoon fresh parsley, minced
  • 1 teaspoon lemon pepper seasoning
  • 1/2 teaspoon dried dill weed
  • 1/2 teaspoon dried basil, crushed
  • 1/4 teaspoon garlic powder
  • 24 sea scallops, rinsed, drained and patted dry
  • 8 ounces bacon strips, each cut into 2 inch pieces
  • 3 to 4 limes, cut into thin slices

Directions
  1. In shallow glass dish, combine melted butter, wine, orange juice concentrate, honey, parsley and seasinings.
  2. Add scalloips, cover and chill at least one hour.
  3. Thread scallops, bacon and lime slices alternately onto skewers.
  4. Place on broiler rack and broil 4 inches from heat source, 3 to 5 minutes per side, basting frequently with marinade. Skewers are done when scallops turn opaque.
