How to make it

  • Wash the lentils.
  • Put in a saucepan together with the carrots and cover with water.
  • Cook until soft.
  • Blend to a fine puré. In the meantime fry the onion in the olive oil until lightly golden.
  • Add the flour and mix well.
  • Add 2 ladles of the lentil puré and mix well. Add the rest of the purée and thin down with some water.
  • Season.
  • Serve hot decorated with chopped chives and strips of carrot.
