Paneer Exotica

- Paneer or cottage cheese ( tofu can be used too) – 300gms shopping list
- ginger garlic paste- 1 tsp shopping list
- Green chillies- 2 shopping list
- onion – 1 medium( slice it very finely) shopping list
- garam masala powder –1/2 tsp shopping list
- cumin seeds( whole)- 1/2 tsp shopping list
- tomato (puree can also be used)- 2 medium shopping list
- Capsicum- very finely chopped- ¼ cup shopping list
- salt to taste shopping list
- turmeric powder – a pinch shopping list
- Red chilli powder -1/2 tsp shopping list
- oil to fry shopping list
- cashew ( crushed roughly) - 10 shopping list
- raisin (soaked)- 15 shopping list
- sugar - ½ tsp sugar shopping list
- coriander leaves for garnishing shopping list
How to make it
- Grate the paneer or you can mash it. (same if tofu is used).
- Add 1/2 tsp of soya sauce and sweet tomato sauce and mix it well.
- Heat oil to smoking point.
- Add cumin seeds and let is crackle.
- Reduce flame and add sliced onion, sauté it till it turns brown.
- Add sugar, stir it and sauté ginger garlic paste .
- Add tomato, capsicum, chilli , turmeric powder, red chilli powder and fry for 3 min.
- When it turns soft and pulpy add soaked raisin and crushed cashew nut and mix well.
- Add grated paneer and stir well so that it gets mixed well with the masala. Cook for 5 mins.
- Add garam masala and mix it. ( just before switching off the flame)
- Serve hot , garnishing with fresh coriander leaves.
- Can be served with Roti, naan, rice and even as filling for bread sandwich.
