Ingredients
  • BASE:
  • 1 cup self-raising flour
  • 1/2 cup white sugar
  • 1/2 cup desicated coconut
  • 1/2 cup cornflakes
  • 125g butter
  • FILLING:
  • 1 x 395g tin of sweetened condensed milk
  • 2 tablespoons golden syrup
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • TOPPING:
  • 3 tablespoons white vegetable shortening (copha)
  • 1/2 cup drinking chocolate powder

Directions
  1. Preheat oven to 180°C. lightly grease a 19cm x 29cm slice tin.
  2. For the base, sift flour into a bowl.
  3. Mix in sugar, coconut and corn flakes.
  4. melt butter, pour over dry ingredients, and mix well.
  5. Press into tin and bake for 10 minutes.
  6. For the filling, put all ingredients in a suacepan and boil for 10 minutes, stirring constantly.
  7. Pour over the cooked base.
  8. For the topping, melt vegetable shortening (copha) and mix in sifted drinking chocolate.
  9. pour over the caramel layer.
  10. put into fridge and leave to set.
  11. When cold, cut into fingers or squares.

Sounds great! I guess I have a question about American vs Australian ingredients though. Here we have evaporated milk, which is canned double strength milk, and sweetened condensed milk, which is a thick highly sweetened milk. The addition of sweeteners in your filling makes me wonder if your condensed milk is sweetened or is more like American evaporated milk?


I needed a good base for a different topping and your base sounds delicious. Thanks Alecia.
