Garlic Sauteed Swiss Chard Recipe
GARLIC SAUTÉED SWISS CHARD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitcomb Estate in Richardson Texas in 1994.

Ingredients
  • 1 pound red or green Swiss chard
  • 1 tablespoon olive oil
  • 2 cloves garlic peeled and halved
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Wash and trim chard then slice stems into 1/2" pieces and roughly chop leaves.
  2. Heat oil in a large skillet over medium heat then sauté garlic in oil several minutes.
  3. Remove garlic and discard then add chard stems to skillet.
  4. Cover and cook over medium heat until crisp tender about 4 minutes.
  5. Add chard leaves then sauté stirring constantly until leaves are wilted about 1 minute.
  6. Season to taste with lemon juice, salt and pepper.
